Château-Chalon
Terroir :
The 50-hectare Château-Chalon vineyard across four villages features blue-gray Lias marl and pebbles from cliffs, which absorb and radiate heat, helping ripen grapes and shaping the wine’s unique character.
Grapes :
Savagnin
Certification(s) :
Organic and Demeter
Vinification:
This unique process involves pressing grapes at 1.5 bar, settling, and fermenting. The wine then ages seven years in small, un topped old oak barrels, allowing a yeast film to develop, adding complex nutty and curry notes. Approximately 30% evaporates naturally, intensifying the wine’s rich flavors.
Aging :
Old wood barrels - 7 to 8 years
Alcohol content :
14%
Sulfites :
< 20mg/l
Tasting notes:
Deep golden-yellow, with an intense nose and long finish. Aromas of walnut, curry, and green apple create a complex wine that vividly reflects its terroir
