Côtes du Jura
Vin Jaune

Terroir : The region's deep grey clays and ancient marls from the Lias and Triassic periods keep the soil cool, thanks to abundant rainfall, enhancing the naturally high acidity in grapes. This geological and soil composition supports healthy vine growth, producing wines with bright acidity, rich flavors, and enhanced aromatic complexity.

Grapes : Savagnin

Certification(s) : Organic and Demeter

Vinification: This unique process involves pressing grapes at 1.5 bar, settling, and fermenting. The wine then ages seven years in small, un topped old oak barrels, allowing a yeast film to develop, adding complex nutty and curry notes. Approximately 30% evaporates naturally, intensifying the wine’s rich flavors.

Aging : Old wood barrels - 7 to 8 years

Alcohol content : 14%

Sulfites : < 20mg/l

Tasting notes: A brilliant golden-yellow, this powerful wine features dominant walnut aromas and a long, lingering finish, showcasing the region’s unique terroir.
